Marmarabirlik Natural Black Olives L, sold under the Hiper name, are large, meaty table olives, about 231 to 260 per kilogram, kept in natural brine in a tin with an 800 g drained weight. The label lists only table black olives, water, salt, lactic acid and calcium chloride and declares no allergen ingredients. They come from the Marmarabirlik olive cooperative union based in Bursa, Türkiye.
A big olive like this belongs on the breakfast table beside white cheese, ripe tomatoes, cucumber and fresh bread, and it looks generous on a meze platter. Halve or slice it for salads, pizza, pide and savoury pastries, add it to pasta, rice or bulgur, or serve it simply with olive oil, thyme and lemon. Because the tin holds a good quantity, it is a practical size for family households and for entertaining.
Store the sealed tin in a cool, dry place. After opening, move the olives and their brine to a clean, lidded container and keep them in the fridge with the olives covered by brine. The olives contain stones, and swollen or leaking tins should not be bought or used.
