Pilavlık bulgur is the classic pilaf grade of bulgur, and this Duru version is made from durum wheat and, according to the manufacturer, cracked in a stone mill. Its medium-large grains stay separate after cooking, which gives the loose, fluffy pilaf that is served with grilled meats, stews and yoghurt.
The manufacturer's cooking instructions are simple: do not soak or wash it, and cook one cup of bulgur with two cups of boiling water. For a classic domates pilavı, fry chopped onion and green pepper in butter and oil, stir in tomato paste, add the bulgur, pour in hot water or stock, season, cover and simmer until the water is absorbed, then rest it under a cloth for about ten minutes. It is just as good in soups, in sarma and dolma fillings, and in warm grain salads with roasted vegetables.
It contains wheat gluten, so it is not suitable for gluten-free diets. Store the sealed bag in a cool, dry cupboard out of direct sunlight; once opened, keep it away from air, moisture and odours.
