Duru Kuru Fasulye is a dry white bean sized at 7 mm. Duru describes it as a good choice for cooks who want a smaller bean than dermason, and the large family-size bag suits kitchens where beans are on the menu several times a week.
Kuru fasulye is one of Turkey's best-loved home dishes. Duru recommends soaking the beans for 12 hours before use. Drain them, then simmer gently with onion softened in butter or oil, tomato and pepper paste and enough water to cover. Add salt towards the end and cook until the beans are soft and the sauce has thickened. Serve with rice pilaf and pickles. Cooled, the same beans make piyaz, the classic bean salad with onion, parsley and lemon or vinegar.
Keep the bag in a cool, dry place away from direct sunlight. Duru gives the product a shelf life of two years; close the bag well after each use.
