Başak Balık Harcı is a fish coating spice mix sold in a 100 g sachet. The English line on the front of the pack reads 'Fish Coating Spice Mix'; in Turkish, harç simply means a ready-made mixture, and this one is intended for coating fish before it is cooked.
Pan-fried fish is a fixture of Turkish tables, particularly along the Black Sea and Aegean coasts, where small fish such as anchovies (hamsi), sardines and horse mackerel (istavrit) are usually coated and fried in a hot pan until golden. A ready mix saves you measuring out separate seasonings: use it on whole small fish or on fillets, following the directions on the sachet for how to coat the fish and how much to use. Serve with lemon wedges, rocket or parsley and a green salad, with rice or potatoes on the side.
Keep the sachet tightly closed in a cool, dry place away from moisture. As with any seasoning blend, check the ingredient and allergen list on the pack before cooking.
